Preparing the Potatoes: The Start of Crispiness

Begin by peeling the thoroughly washed potatoes, then carefully grate them. Using a blender might result in overly fine particles, which can reduce the chewy texture, so grating is recommended. Grated potatoes can brown quickly if left out, so immediately strain them through a fine-mesh sieve.

Don't discard the potato liquid collected below the sieve. Let it sit undisturbed for about 10 minutes. After a while, clear water will accumulate on top, with a white, heavy natural starch settling at the bottom. Carefully pour off the clear water from the top and discard it. The milky potato starch left at the bottom is the key ingredient that makes the outside of your potato pancakes crispy and the inside delightfully chewy.
