Many people worry about pesticides lingering deep inside cabbage, leading them to painstakingly peel off each leaf. However, this method not only unnecessarily extends cooking time but is also a flawed way to wash cabbage that can lead to the loss of its precious nutrients.

Do Pesticides Really Penetrate Cabbage?

Cabbage grows with its inner leaves tightly wrapped, forming a round head. Because of this structure, pesticides sprayed during cultivation have difficulty penetrating the core. In reality, most external pesticides or contaminants remain on the outermost leaves. So, there are safe ways to wash cabbage without having to peel each leaf.

The Right Way to Wash Cabbage

Soaking cabbage in water for extended periods can cause nutrients like Vitamin C and Vitamin U to leach out into the water through the cut surfaces. This can tragically lead to the loss of the cabbage's essential nutrients. So, how should you wash it?

  • Instead of separating all the leaves, simply remove the outer 2-3 leaves that were most exposed to air or potential contaminants.
  • It's hygienically better to discard these outer leaves rather than using them in cooking.
  • After removing the potentially contaminated outer leaves, hold the cabbage under running water and wash the surface thoroughly. Using the friction of running water is more effective than soaking it in still water.

Storing Fresh Cabbage

Just as important as safe washing is a good method for maintaining freshness. Before refrigerating your cabbage, be sure to cut out the firm core. This core, even after harvest, continues to draw moisture and nutrients from the surrounding leaves, reducing overall freshness and causing it to spoil more quickly.

After cutting out the core in a circular shape, stuff the cavity with a damp kitchen towel to provide continuous moisture to the cabbage. Then, wrap the entire head tightly in plastic wrap to prevent air exposure and refrigerate. This prevents moisture evaporation, wilting, and helps maintain its crisp texture for a long time.
