Basic Ingredients for Seaweed Soup

Here are the ingredients you'll need to make seaweed soup:

  • Beef for soup (brisket or similar cut) 200g
  • Dried Seaweed for 4 servings
  • Garlic 4 cloves
  • Soup Soy Sauce (Guk-ganjang) 4-5 tablespoons

Preparing the Seaweed

First, soak the dried seaweed in cold water for about 10-15 minutes until fully rehydrated. Then, gently knead and rinse it several times until no more foam appears. This process helps remove impurities and any fishy smell from the seaweed. Squeeze out excess water by hand and cut it into bite-sized pieces.

Searing the Beef

Don't add any separate oil to the pot; start by searing the beef brisket. The natural fat rendered from the beef is enough to create a savory flavor. The key here is that by omitting sesame oil at this stage, the soup broth turns out much lighter and cleaner. Using good quality beef brisket is crucial for delicious seaweed soup.

Adding Seaweed and Soy Sauce

Once the beef releases a savory aroma, add the prepared seaweed and stir-fry them together. Stir-fry slowly for about 2-3 minutes, allowing the seaweed to absorb the beef fat. This step is essential for bringing out the umami. Next, add the soup soy sauce and stir-fry once more. This allows the seaweed to absorb the seasoning naturally, and you'll notice a richer, deeper flavor when the soup boils.

Making the Broth with Rice Water

Now, instead of plain water, pour in plenty of rice water (the second or third rinse). It's best to avoid the first rinse water as it may contain impurities. Add enough rice water to generously cover the seaweed. Once the broth starts boiling over high heat, skim off any foam that rises to the surface with a ladle. Leaving the foam can make the soup cloudy and impart off-flavors, so skimming it off periodically results in a clearer, more refreshing seaweed soup.

After the broth has simmered and developed flavor, add more soup soy sauce to adjust the seasoning to your taste. It's better to season gradually rather than all at once. Finally, add minced garlic and simmer on low heat for another 5-10 minutes. Adding garlic at the end preserves its aroma and allows it to meld beautifully with the flavors of the beef and seaweed. This method yields a savory yet deeply flavorful seaweed soup, even without added sesame oil.

Seaweed soup might be a familiar dish, but changing just a few cooking steps can significantly alter its taste. Try using the beef's natural fat instead of sesame oil and making the broth with rice water, as introduced today. Experience the richer, cleaner broth flavor for yourself!
