Anisakis is a type of parasitic roundworm belonging to the Anisakidae family. These organisms reside in the digestive tracts of marine mammals, which serve as their definitive hosts. There are several species, including Anisakis simplex and Anisakis physeteris. The life cycle involves adult worms releasing eggs into the sea, which hatch into larvae. These larvae are then ingested by crustaceans and subsequently infect fish like mackerel, cutlassfish, and sea bream. Infected fish then become prey for marine mammals, completing the cycle as the parasites mature in their intestines.

Causes and Symptoms of Anisakis Infection

Anisakis infection primarily occurs when people consume raw or undercooked fish. In humans, infection can trigger an allergic reaction by stimulating the production of immunoglobulin E (IgE). Anisakiasis is a gastrointestinal illness caused by eating uncooked seafood, and its symptoms include:

  • Severe abdominal pain
  • Nausea
  • Vomiting

These symptoms can appear within an hour of ingestion. If the larvae migrate into the intestinal wall, a severe condition called eosinophilic granuloma can develop after 1-2 weeks, presenting symptoms similar to Crohn's disease. It's important to note that even cooked food can pose a risk if Anisakis larvae are not properly eliminated, so caution is advised.

How to Prevent Anisakis Infection

The most crucial step in preventing Anisakis infection is to avoid eating raw or undercooked seafood. In particular, consuming raw fish guts should be strictly avoided. Anisakis parasites can be killed by cooking at temperatures above 60 °C (140 °F) or by freezing. The U.S. Food and Drug Administration (FDA) recommends either flash-freezing all fish intended for raw consumption at -35 °C (-31 °F) or below for 15 hours, or standard freezing at -20 °C (-4 °F) or below for 7 days. Be aware that salting or marinating does not effectively kill these parasites.
