Stir-fried potatoes are a beloved staple side dish in many households. But did you know they can surprisingly be tricky to make? Often, stir-fried potatoes can easily fall apart, or stick to the pan and burn on the outside while remaining crunchy on the inside. Today, I'm sharing a recipe for stir-fried potatoes that will help you achieve a neat, non-crumbling texture, perfectly cooked through to be soft and chewy!

Stir-fried Potato Recipe Tips: How to Make Them Perfectly

Preparing the Ingredients

Here are the ingredients you'll need to make stir-fried potatoes:

  • 3 potatoes
  • 3-4 strips of bacon
  • Salt, pepper
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

Preparing the Potatoes

The first step in making stir-fried potatoes is to slice them into uniform strips about 0.2-0.3 cm thick. Cutting them to a consistent size ensures even heat distribution, preventing any part from burning or remaining crunchy, and allowing them to cook evenly throughout.

Instead of immediately stir-frying the sliced potatoes, it's best to blanch them briefly in boiling water with salt for 1-2 minutes. This process removes excess starch, preventing them from sticking to the pan, and partially cooks them, significantly reducing the stir-frying time and the amount of oil absorbed.

Starting the Stir-Fry

After blanching, drain the potatoes completely and stir-fry them in a heated pan with oil over medium-low heat. Season with about 1/3 tablespoon of salt at this stage. Make sure to use enough cooking oil to prevent the potatoes from burning and to give them a glossy, coated finish.

An essential seasoning for stir-fried potatoes is pepper. Pepper enhances the clean, savory flavor of the potatoes, adding depth. Adding pepper while stir-frying introduces a subtle spiciness and aroma that cuts through any richness, resulting in a clean taste.

Adjusting Seasoning and Adding Bacon

Adjust the seasoning by adding 1-2 tablespoons of soy sauce. If the taste felt a bit lacking with just salt, a touch of soy sauce can add a deep umami flavor and richness. Soy sauce can burn quickly, so mix it in and stir-fry rapidly.

Additionally, adding bacon to your stir-fried potatoes, which can otherwise be a bit plain, adds a savory umami flavor and a satisfying chew. Bacon itself is salty, naturally seasoning the potatoes, and results in a flavor that everyone loves.

Finishing Touches and Tips

Sesame oil's nutty aroma is highly volatile, so always add it after turning off the heat and toss gently. This ensures you fully capture its fragrant flavor.

If your potatoes still feel a bit crunchy, don't keep stir-frying. Instead, cook them to about 80-90% doneness, then turn off the heat and cover the pan. Letting them sit in the residual heat and steam will allow the moisture to penetrate and cook them through softly. This method ensures they are perfectly cooked inside—fluffy and tender—without losing their shape.
