Essential Ingredients and Preparation

First, let's gather the ingredients you'll need for your perfect steamed egg dish. Here's what you'll need:

  • 3 Eggs
  • 1 Tablespoon Mirin (Sweet Rice Wine)
  • 3 Pinches of Salt
  • 1 Tablespoon Soy Sauce
  • 1/2 Tablespoon Sesame Oil

The first step is to gently whisk the eggs. Crack the eggs into a bowl and, keeping your chopsticks at the bottom of the bowl, stir slowly in a circular motion. Be careful not to create too much foam during this process. Excessive foam can lead to a rough texture in the finished dish.

Water Temperature and Seasoning

Next, add about 250ml of water. It's best to use warm water around 40-50°C (104-122°F) rather than cold water. This helps the egg mixture combine smoothly, resulting in a tender and uniform texture.

Then, add a tablespoon of mirin to eliminate any eggy smell and season with salt to taste. Using salt (or a seasoned salt blend) adds a wonderful savory depth, allowing you to achieve a rich flavor without the hassle of making broth or adding mentsuyu.

The Importance of Straining

For that incredibly smooth, restaurant-quality texture, the most crucial step is to strain the egg mixture through a fine-mesh sieve. This process removes any clumped egg white strands and tiny air bubbles, ensuring a consistent density in the mixture. The result? A silky smooth surface and a moist interior after steaming.

Steaming and Finishing Touches

Before steaming, lightly coat the inside of your steaming dish with sesame oil. Then, carefully pour the prepared egg mixture into the dish. Skim off any small bubbles on the surface with a spoon or gently pop them. Now, cover the dish tightly with plastic wrap and let's get ready to steam!

Once the water in your pot is boiling, reduce the heat to low and steam gently for about 15 minutes. This slow cooking prevents the egg from over-inflating or developing large holes. After 15 minutes, don't lift the lid immediately! Turn off the heat and let it rest for 5 minutes to allow residual heat to finish the cooking.
