Damaged onions are prime breeding grounds for mold and bacteria, and keeping them with healthy ones can significantly shorten their shelf life. So, make sure to only store the fresh ones!
Curing: An Essential Step for Onions
Once you've sorted your onions, it's time for the next crucial step: drying them in a well-ventilated, shaded area. This process is called curing, and it's vital for hardening the outer skin, preventing moisture loss from the inside, and warding off rot. Let your onions dry for about 3 to 5 days, flipping them occasionally.
Store in Breathable Containers
After your onions are properly cured, it's time to prepare a breathable cardboard box for storage. Punch several holes in all sides of the box using a screwdriver or knife. This allows for good air circulation, preventing moisture buildup inside. At the bottom of the box, lay down a thick layer of newspaper. The newspaper will absorb any micro-moisture in the air, helping to prevent mold.
Tips for Long-Term Storage
If you want your onions to last even longer, several months or more, it's a good idea to individually wrap each onion in newspaper before placing them in the box.
