Steamed eggs (Gyeran-jjim) are a simple dish, but making them as soft and moist as those served in restaurants is trickier than you might think. Anyone can make it, but a tiny difference can change the taste and texture. Today, I'll share the secrets to making silky smooth and moist steamed eggs at home, just like pudding.
Ingredients and Preparation
The ingredients you need for steamed eggs are simple. Please prepare the following:
- 4 eggs
- 400ml water
- 1/2 teaspoon salt
- 1 tablespoon sesame oil
- A little chopped green onion
First, crack 4 eggs into a bowl and add about 1/2 teaspoon of salt to season. At this point, don't whisk the eggs too vigorously, as this can create foam. Gently whisk to create the egg mixture. Too much foam can result in a rough surface after cooking.
The Secret to a Soft and Moist Texture
You don't need many seasonings for steamed eggs. If salt alone isn't enough for a savory flavor, try adding 1 coffee spoon of tuna extract or a little bit of fermented shrimp (saeujeot). This will give you a richer taste.
The most crucial step is using warm water instead of cold water. Warm water helps the eggs cook more evenly, greatly contributing to a soft and moist texture. The ideal temperature is around 40-60℃ (104-140℉). Be careful, as water that's too hot can cook the eggs prematurely.
Strain for an Even Smoother Texture!
Now, strain the egg mixture through a sieve. This step removes any chalazae (egg white strings) or unincorporated egg white, making the texture even smoother. This straining process is one of the reasons why restaurant-style steamed eggs have such a silky finish.
Pour the strained egg mixture into a microwave-safe heatproof bowl. Don't cover it completely; instead, place the lid slightly ajar or loosely cover it with microwave-safe plastic wrap. This allows steam to escape while retaining adequate moisture, preventing overflow. If using plastic wrap, be sure to poke holes with a chopstick or similar utensil.
Easy Cooking with the Microwave
Now, microwave for about 4 minutes, then top with green onions and microwave for another 30 seconds. If it's not quite done, it's best to check the consistency and microwave in 20-second increments. Cooking in short bursts is less likely to result in failure than microwaving all at once.
Once the steamed eggs are done, finish with a few drops of sesame oil. Simply using warm water instead of cold and straining the mixture once will result in much softer and smoother steamed eggs. You don't even need to get out a steamer or a traditional earthenware pot; the microwave is perfectly sufficient!
