Cabbage Prep & Storage Hacks: Keep It Crisp!

The Importance of Preparing and Storing Cabbage

Cabbage is a staple on many tables, but without the right preparation and storage, you can lose out on its delicious taste and texture. If you refrigerate a cut cabbage with the exposed side facing out, moisture evaporates quickly, leading to a tough texture and even browning. Today, I'll share tips on how to shred cabbage for the best texture and how to store it to keep it fresh.

How to Prepare and Store Cabbage to Maintain Its Texture

How to Shred Cabbage

Simply cutting cabbage into thick pieces can result in a tough texture for salads, and it wilts easily. That's why it's crucial to shred it thinly and lengthwise, following the grain. If you want to achieve that crisp yet tender texture you get in restaurant salads right at home, try shredding the cabbage as thinly as possible.

Here's a pro tip! Instead of a regular knife, use a peeler to get thin, uniform shreds. Gently glide the peeler along the cut surface of the cabbage, and you'll easily get soft, thin cabbage shreds. It's easy to control the pressure, ensuring consistent thickness for a crisp yet pleasant bite.

How to Store Fresh Cabbage

Shredded cabbage continues to release moisture, making proper storage essential. Using a glass container helps maintain a relatively stable internal temperature, reducing excessive condensation. Plus, they often have a good seal, minimizing the absorption of refrigerator odors. Let's try storing it this way:

  • Place a paper towel at the bottom of the glass container. This absorbs the moisture released by the cabbage, preventing it from becoming soggy.
  • After adding the cabbage, cover the top with another paper towel for even better moisture control.
  • Seal the lid tightly and refrigerate. This minimizes exposure to outside air and odors, keeping it fresh.

Important Notes for Storing Cut Cabbage

If you cut a cabbage in half and store it cut-side out in the fridge, moisture evaporates quickly, leading to browning or drying out from the edges. The cut surface exposed to air can also intensify its characteristic smell, making proper storage even more critical. Try these methods:

  • Cover the cut surface with a damp paper towel to prevent moisture loss. Make sure it's only lightly damp, not soaking wet.
  • After covering the cut surface with the paper towel, place it in a zipper bag or airtight container and refrigerate. This reduces air contact and keeps it fresh for longer.

This method also helps slow down drying of the cabbage core, effectively maintaining its crispness. It's especially helpful for households that use a whole cabbage over several meals, ensuring you can use it fresh until the end and reduce waste.
